Television talent competitions have launched some amazing careers, from Camila Cabello to Carly Rae Jepsen to Ariana Grande herself. Carol Biazin knew she had skills when she hit the stage of 'X-Factor Brasil' in 2016, but it was all a bit overwhelming. Happily that didn't stop her from participating in 'The Voice Brasil' a year later, where she was a finalist. Not only did those experiences bolster her confidence, they also got her name around. The talent the Paraná native had been testing out in regional situations for a few years proved real: a wider audience was waiting. If you've heard Biazin's 2020 debut, 'Beijo de Judas,' you know the young singer is mature beyond her years. That's why Luísa Sonza, Vitão, Dilsinho and Gloria Groove all accepted invitations to help Carol realize her vision by guesting on the album. They surely paid attention to her rise, which included her catchy "Talvez" debut and moved quickly to the four tracks that comprise her 2019 'S' EP, including "Suas Linhas," a sure sign that Biazin was going to make a sizable dent in Brazilian pop. A tour of the country's key cities put her performance charisma in front of fans who couldn't get enough (check the latest Spotify numbers). Last year’s DVD of the 'Beijo de Judas' songs, in which she’s backed by an all-woman ensemble, clearly shows the audience was on her side. The record is all about the energy created when artists and admirers share the common goal of entertainment. Multi-instrumentalist Biazin, who's unafraid of experimentation, is a strong songwriter as well. She's helped craft hits by Anitta, Vitão, Rouge, and Negra Li. When she hit our London studio for these ATW performances of “Bacardi” and “Fica Pro Café,” she reveled in the chance to create with UK musicians she hadn't previously played with. Courage and fun mix well in Biazin's world, which is shaping up to be a place lots people are gonna want to be in 2023.

I used to think salmon belonged in one place and one place only: Cured, thinly sliced and draped onto on my well-toasted everything seed bagel with too much cream cheese, raw red onion and lots of capers.

Well, I’m pleased to report it also belongs here: Cooked in browned butter, served with raw red onion, lots of capers and….dill. Of course, there is dill. Sound familiar? Yes, I did make a salmon recipe accidentally inspired by a bagel, thank you for noticing. Of course, “there are no new ideas” is not a new idea, and neither is the marriage of salmon, red onion, capers and dill, but that does not mean I will not NOT be celebrating it to its fullest extent. Which brings me to my next question: Why don’t more bagel shops offer dill?

Aside from the recipe, this video truly has it all: a tacky dating story, my In-N-Out order, and a new cast member (its…..a bunch of dill). Even if you don’t make this particular salmon recipe, the method (pouring a mixture of browned butter and olive oil over it and cooking it briefly at a low-ish temperature) is pretty foolproof.

And before you ask: If you hate capers, sure, leave them out. If you can’t digest raw onions, fry them all. If you just REFUSE to love dill, yes, you can use parsley. This is really about the fish, the fat and the low and slow temperature used to roast it. Whatever you put on it is your business (but I do recommend all the things seen here).
